Chocolate Walnut & Fig Balls

Makes: 11

Ingredients:

100g pecans or walnuts
60g desiccated coconut
3 tbsp Linwoods flaxseed, sunflower, pumpkin, sesame & goji berry mix
1 tbsp bee pollen
2 tsp organic vanilla extract
3 soft dried figs

2+1/3 bars Dr Coys Orange Crisp bars

Method:

Whizz the pecan (or walnuts) and coconut in a food processor until soft breadcrumb texture. 

Add the remaining ingredients, except the chocolate. Whizz until soft, sticky and easily holds shape when pressed tightly with your fingers. 

Using a tablespoon measure, scoop out 11 ball portions. Shape into balls. Place on parchment. 

Melt the chocolate, coat each ball and place on a parchment-lined pate. Place in the fridge to harden. 

Store in the fridge before serving up and Enjoy!
