The prep-the -night before breakfast avocado mousse
Ingredients:
100-140g defrosted raspberries
340g Rude Health coconut milk
1 small (95g) ripe avocado
25g cacao powder
1 tbsp hulled hemp seeds
1 tbsp hazelnut butter
1 scoop (20g) vanilla flavoured protein powder
2 soft Medjool dates, stone removed and chopped
1 tsp vanilla extract
Optional Toppings:
1 tsp hulled hemp seeds
2 extra raspberries
1/4 tsp bee pollen (optional)
Place all the ingredients, except the toppings into a high speed blender and whizz until smooth. Spoon into serving glasses, sprinkle with any or all of the toppings. Refrigerate for an hour to thicken then serve.
Better still make the night before and refrigerate in 2 small serving glasses. The next morning add the toppings. It has a thicker and velvety texture then.
Avocado Mousse – this is a luscious, silky smooth meal. It is sinfully delicious and sooo good you would never think it was a health food!
