Pecan, date & coconut bar
Pecan, Goji Berry & Date Brownie
70g Medjool soft dates
50g diced dried figs
120g desiccated coconut
2 tbsp organic maple syrup
20g Nuzest protein powder *
25g raw cacao powder
80g chopped & toasted pecans
10g goji berries (optional)
Whizz up all the dates, figs and coconut until you reach a sticky consistently. Add in the remaining ingredients and whizz to a fine breadcrumb stage.
Spoon out into a parchment-lined 2lb loaf tin. Press down into the tin to form a smooth layer using your hand and/or spoon.
Refrigerate for 1 hour then cut into 4 bars or 8 squares.
Depending on the size of food processor you use it may be necessary to scrape down the sides of the bowl a few times to ensure all ingredients are fully mixed in.
Keep refrigerated until ready to use.
- Nuzest protein powders have a variety of flavours. I use the strawberry or the vanilla chocolate flavours for this.
