Cheesy Onion Hummus
A definite in our house around celebration time whether it is Christmas, Easter, birthdays, anniversaries! Anytime really where you'd love to dive into a packet of crisps. It works for me, I hope it works for you. At these times I have it with homebaked chips but better with veggies for a healthier twist on a regular basis.
1 tin (240g net wt.) chickpeas
2 finely diced large shallots
2 tbsp light tahini
2 tbsp lemon juice
1 finely diced garlic clove
2 tbsp nutritional yeast flakes
1 tsp gluten-free tamari
sea salt and black pepper to taste
Whizz all the ingredients, except the salt and pepper, until smooth. Add in filtered water (1 tablespoon at a time) to get a lighter texture. Season with the sea salt and black pepper to taste.
Serve with baked potato chips or veggies (e.g. carrots, celery, peppers, cucumber cut into thick chunks or slices).
